2o12情人节快乐-巧克力乳酪蛋糕

每年的2月14,都会头疼该酱庆祝!想起去年没有做蛋糕,而是买了衣服送给他、去外头吃一餐就算!回想起当时...我们要找间比较有情调的地方,坐下好好享餐都很难!好不容易来到一家吃“杂”扒(什么扒都有所我就简单形容)餐厅,好彩我们幸运,唯一的位置我们先到!后头还来了几对情侣,只能等到有空位了!

这一次身份不同了,为人妻子了,还是第一年在婆家庆祝呢!所我计划亲自下几道简单菜肴!只是在下实在感惭愧,因我在烹饪方面真的差劲不得了,还得麻烦到妈妈2(老公的妈妈^^)帮忙我,很不好意思呐:P

情人节前一天才赶完情人节蛋糕订单,所第二天也很匆忙地做了一粒蛋糕(巧克力乳酪蛋糕)和甜品(草莓布丁)给我们自己!为了给他惊喜,所都不麻烦老公载我去超市买材料!自己就驾着单车,驾在我还不是很熟悉的新马路...心里还挺担心自己会迷路!幸运的我还能单凭马虎的记忆认路^^

不知不觉中,手里大袋小袋的!糟...单车能够载得了吗?不能再犹豫了,时间有限呀!慢慢驾驶还可以过关啦^^ 已经是下午3时30分钟了,一直担心赶不及蛋糕出来,要冷静下来马上准备做蛋糕了!虽说要冷静但这怎么可能丫!

烘蛋糕途中,老板这时要取货了!哇...边排放蛋糕在客户车里,边顾虑着我的爱心蛋糕丫!(虽说烘烤时间是一小时,习惯性的我都会不是注意烤箱里头,因为不一样的烤箱有不一样的烘烤时间和温度)天呐...老板这一走,我就飞去巡蛋糕了!哇...金褐黄了!赶紧取出来探探...咳~好彩好彩的我丫!要不然会把我那一整天的心情给搞糊了,也许会延续到第二天呢!

蛋糕是烘好了,再瞧瞧时间,来不及装饰了也来不及做甜点了!要准备情人节晚餐(炒式意大利面、麦片鱼片、Nurget)了!煮好了就打通电话要老公赶紧回来了!

吃饱了,我告诉老公等我装饰好了才能够吃蛋糕!再拖到第二天下午才装饰好,晚上与老公享受了!老公应了一句:吃了这么多蛋糕,这一粒是最好吃的!丫呼... ...开心^^ 因为一向来老公都说吃多芝士怕腻。刚我问了他,他答这一粒吃多不怕哟!嘻嘻^^ 丫呼o 这还得感激君之的食谱。君之说的没错:绝对征服所有人 <3

7寸活动膜 7" loose-base cake tin

蛋糕底 cake base
100g 消化饼干, 压碎 digestive biscuit, crushed
50g 溶解黄油 melted butter

芝士糊 cream cheese mixture
250g 奶油芝士 cream cheese
2 鸡蛋 egg
50g 幼糖 castor sugar
60ml 动物性淡奶油whipping cream
1/4t 香草精, 可不放 vanilla esen, optinal

巧克力奶油 chocolate ganache
70g 黑巧克力 cooking chocolate
60g 动物性淡奶油 whipping cream
10g 黄油 butter

做法 
  奶油芝士提前一小时放到室温下软化。
  蛋糕底:消化饼干和黄油拌匀,压在模里,冷藏。
  芝士糊:奶油芝士放在双煮盘热水上搅煮至融化。加入幼糖,打至滑。分次加入鸡蛋打匀。移开双煮盘,倒入动物性奶油和香草精搅拌匀,倒在饼皮上。
  160度蒸烤1小时至熟或至金黄色,熄电,把门打开少许让蛋糕冷却。
  巧克力奶油:全部隔水加热,不断搅拌至完全融化,趁温热直接倒在乳酪蛋糕上。静置一会儿,放入冰箱,冷藏4个小时以上或隔夜。


提示
  消化饼尽量压碎。
  烤芝士蛋糕采用水浴法,如果是活底模,注意一定要把底部用锡纸包好,防止烤的时候水进入蛋糕内部。
  切芝士蛋糕时,刀先在火上或浸在开水里稍微弄热一下才切,可以切得非常平整。每切一刀,到要抹干净再重新弄热一下再切。
  最好用活底模做芝士蛋糕,因为芝士蛋糕非常脆弱。


Method
  Remove cream cheese from the fridge 1 hours at room temperature.
  Cake base: mix biscuits with melted butter evenly. Press into cake tin and chilled.
  Cream cheese mixture: double-boiled cream cheese till dissolved, add in sugar beat till smooth. Add egg one at a time and beat well. Remove it from double-boiler, add in whipping cream and esen, mix well, pour into the biscuit base.
  Bake in water bath at 160℃ for 1 hours or till golden brown, turn the oven off, leave the cake in the oven with door half and let it cool to the room temperature.
  Chocolate ganache: Double-boiler all ingredients mix till well blended, pour it over the cake while hot. Put it aside for a while, refrigerate it for 4 hours or overnight.


Tips
  Try to crush well biscuit.
  Cheese cake bake in water bath, must wrap the loose-base cake tin in foil to prevent the water within the cake when baked.
  Before cutting the cheese cake,  better to grill or rinse the knife in hot water, can be cut very neatly. Wipe knife dry and grilled hot before each cut.
  Better use loose-base cake tin due to cheese cake very weak.
